Walnut Cheddar Loaf - One of Our All Time Favourites

Back in 1982 when we became vegetarians, there were very few good educational resources for vegetarians.  The first reliable "guide" that we found was Frances Moore Lappe's Diet for a Small Planet.  It was written in 1971 and has sold several million copies.  In this book, Lappe exposes the wasteful practices of raising the Western meat-based diet using grains that could be used to feed many more people.  She also outlines the practice of "complementary proteins" where proteins from certain food groups are combined with proteins from other food groups resulting in a complete protein that mimics proteins found in meat.

From her book, we found several recipes that we have enjoyed many times over the years.  Walnut cheddar loaf is one of the best and we have eaten it countless times over the past 28 years.


WALNUT CHEDDAR LOAF


Ingredients
2 tablespoons olive oil
2 cups chopped yellow onions
1 cup coarsely ground walnuts
1 cup grated cheddar cheese
2 tablespoons lemon juice
2 beaten eggs
2 tablespoons nutritional yeast
1 tablespoon sesame seeds
1 1/4 cup cooked brown rice (1/2 cup uncooked rice)
salt and pepper to taste


Directions
1.) Preheat oven to 350 degrees Fahrenheit
2.) Saute onions in olive oil until translucent
3.) Mix in remaining ingredients, salt and pepper and put in an oiled loaf pan.
4.) Bake for 30 minutes.


Serves six.  Freezes well after baking - reheat in microwave oven.
